- 3/4 cup uncooked brown rice
- 2 cups vanilla soymilk (or regular soymilk if vanilla is unavailable)
- 1/3 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup golden raisins or dried sweetened cranberries (optional)
- 1 teaspoon vanilla extract
1. Bring 1 1/2 cups soymilk to a boil in medium saucepan. Stir in rice, brown sugar, cinnamon and salt. Return to a boil. Reduce heat; cover and simmer 15 minutes.
2. Stir in remaining 1/2 cups soymilk and raisins, if desired. Cover and simmer 10 to 15 minutes to until rice is tender. Remove from heat ; stir in vanilla. Serve with berries, if desired.
Note: Rice thickens as it cools. For a thinner consistency, stir in additional soymilk just before serving.
